grilled romaine

End of last week, I spent time with friends and took walks with old fashions in my hand.  It was actually quite lovely.  Especially since work keeps throwing out curve balls.  I will have a job or I will not have a job.  I am not sure what I wish for currently but I do know I appreciate time.  I spent a lot of time at my sewing machine this weekend.  There is potential.

After too many cooking shows, fire has become important for cooking.  There are more bits of meat and fish to be grilled.  But I had heard of a grilled caesar salad so I decided we just needed to try to grill the romaine, especially when I am making my own dressing now.

I take a head of romaine lettuce, pull off the outside damage leaves, and paint it with a bit of olive, avocado, or walnut oil.  Then it goes on the grill, not touching it, until there are nice grill marks and even a bit of char.  A minute or two depending on the heat of your coals or flame.  I only grill one side.

Then, it goes on a plate.  I put some pine nuts and caesar salad dressing.  Homemade croutons from homemade bread if I wish.  Some parmesan or asiago cheese.  You could put anything on it you actually wished too.

This is so good!  I actually ate a salad made from a half a head of lettuce like this tonight.
