pie day

Today became a world wide pie day.  Even though I prefer crisp in taste and making, I decided to give it a try.  There were peaches local and they are so good.  I like them with yogurt.  I thought with a molasses cookie pie crust, a bit of honey, cinnamon, and ginger, a lovely pie would be made.  And it was.  My Beloved wanted seconds before I even finished my firsts.  It is a bit rustic looking but I do believe that was trying to work with the cookie dough in the heat.  I squished into a pie pan when my kitchen was hotter then outside.  It was above ninety outside.

Peach Pie with a Molasses Crinckle cookie crust

1 recipe molasses crinckles

2 pounds peaches

1/4 cup honey

1 teaspoon cinnamon

1 teaspoon ginger.

Preheat the oven to 350 degrees Fahrenheit.  Grease and flour a nine inch pie pan.  Mix the molasses crinckles per the recipe.

 

Pat the cookie dough into the pie pan.  I really only wished to use half but I used more of the dough.  I was fighting the heat.  Bake for 20 minutes in the preheated oven.

When the crust is baked, pull out and run a spoon over it to push down the poof.  Let cool for about 30 minutes.

In a large bowl, slice in the peaches.  Mix with the honey, cinnamon, and ginger.

Pour the peach mixture into the pie crust and bake for 40 minutes at 350 degrees Fahrenheit.

Serve.  I thought this was awfully rich but it would be good with homemade vanilla ice cream.

Like I said, I really prefer crisp.  It is probably what I will let it become next time.  But my Beloved likes it!

quiet evening

Part of this weekend was finding a fabric store I liked.  I think one of the largest draws for us to go back is that they have a bowl called button soup where you can dig through the bowl and take purchase any of the buttons you like for twenty cents.  My Beloved plopped himself right down and found 31 wooden buttons he liked.   It is better then him going around the fabric store and touching fabric.  The ones he likes usually run $300 a yard.  He says he is not allowed to touch fabric anymore!  The man does make me laugh.

It is a good thing he found buttons he liked because I am working on another fuzzy shirt for him that will need buttons.  And he likes the idea of the kilt I am working on for him have wooden buttons instead of snaps.  There are also three more shirts cut out.  None of them are work shirts so they can all have wooden buttons.  The idea will be to mix and match them.

I have been having quiet evenings lately because I am the only one home.  I am trying to perfect a chocolate swirl bread or a chocolate roll.  I think it works better as a roll.  When I am pleased with the recipe, I will share.

Russell's new power bars or better known as fig bars

This was my first pass at this recipe.  Which means I sort of followed the recipe.  I think it needs some tweaking.  Russell and friends do not.  I am going to tweak and when I am happy with it, the recipe will be here.  Also, the gluten free version since I had that request.  Welcome to my life.  At least I get called a goddess often.......

When the heat index is over 100

There is a need to feel like it is a different time of year.

I made pumpkin pie brownies from Vegan Cookies Invade Your Cookie Jar by Isa Chandra Moskowitz and Terry Hope Romero.  They are fabulous!

I think they got richer after they sat over night but Russell did not.  And it did help with trying to be in a different head space.
